Feeding your Soul - Aldina Vineyards Food & Wine Pairing

Located in picturesque Bacchus Landing in Healdsburg, Aldina Vineyards is a delightful newcomer to wine and food pairing experiences in the region. Recently, they introduced a new offering that showcases the culinary expertise of Chef Tomas Guzman. During our visit, we were treated to a delectable trio of dishes. The first was a mouthwatering blue corn tostada adorned with the freshest fish of the day, creating a harmonious blend of textures and flavors. Next, we indulged in crispy pork belly accompanied by creamy guacamole, a match made in culinary heaven. And finally, the pièce de résistance, a succulent beef short rib braised to perfection in a rich red pepper sauce.
To elevate the tasting experience further, each dish was thoughtfully paired with one of Aldina's exceptional wines. The 2022 Chardonnay, aged in stainless steel with nice acidity and a clean finish , complemented the bright and zesty halibut tostada. The 2022 Rose of Cabernet, bursting with vibrant berry notes, gracefully accompanied the rich and tender pork belly. And finally, the 2019 Cabernet Sauvignon, with its robust character and velvety tannins, proved to be the perfect partner for the hearty and flavor-packed beef short rib.
From the moment we stepped foot into Aldina Winery, we were impressed the attention to detail that showcased the artistry and passion of both winemaker and chef. The wine and food pairing at Aldina is a must-try experience, leaving guests with a lasting impression and a newfound appreciation for the harmonious marriage of great wine and exquisite cuisine.
